Marianne and Andrew (Our adopted Italian aunt and uncle) gave me a bag of quinces and an axe yesterday, and here’s what I did:
1. Chopped with the axe
2. Then I chopped smaller
3.Then I cute out the woody core
4. Then I peeled off the nappy peel
5. Then I stewed with enough water to cover, 3/4 c sugar, and about 2 T. honey. Stewed until soft and much of the water boiled off. Then mashed with a potato masher. Quinces are quite tart, so of course we will eat with vanilla gelato.
