Adventures with Tomatoes

In the Northwest, when you finally get a tomato you get tomatoes! Yes it's September, but good things come to those who wait. And as the old saying goes when "life gives you tomatoes, make dried tomatoes!" (Hard to believe that saying never took off.)

With this I dried some of my farmer's market tomatoes and my homegrown tomatoes. It's quite easy and they make beautiful and yummy garnishes or even better snacks.

We are lucky enough to have a dehydrator, but you don’t need one.

1. Get tomatoes. Any size will do, none of mine were bigger than a golf ball.

2. Wash your tomatoes and dry

3. Cut into 1/3 inch thick slices

4.  Place in the dehydrator or oven 140° F for 6-8 hours.

5. Eat, share, enjoy

A mix of tomatoes from the farmer's market and our garden.

Sliced and ready to go.

So many pretty kinds: black, red, orange, yellow

Partially dried about 1/2 way through

 Finished and in the sunshine

On a quiche, yum!
